Menu for Saturday Banquet:

Salad:
Cucumber Wrapped Mixed Green Salad
with Crumbled Feta Cheese served with Lemon Oregano Vinaigrette or Parmesan Peppercorn Dressing
(Can be prepared without cheese upon request, during registration)
- Entree Choices:
- Meat: Seared Breast of Chicken with Mushroom Ragout, Fettuccini, and Seasonal Vegetables
- Salmon: Broiled Salmon with a Lemon Caper Sauce, Yukon Gold Mashed Potatoes, and Seasonal Vegetables
- Vegetarian: Vegetables Purse (A puff pastry encased with couscous and roasted vegetables) served with an optional marinara or pesto sauce (This entree is vegan-friendly)
- Desert: NY Style Cheesecake
(A vegan-friendly desert option is available upon request.)
